Quinoa and Mango Salad

Ingredients

 

100g quinoa

300ml boiling water or stock

1 small mango sliced and cut into small chunks

1 lime or small lemon peeled, segmented and cut into small chunks

½ finely chopped red onion or more if you love it!

2tbs desiccated coconut

Half a tin butterbeans – rinsed and drained

1tbs chopped fresh parsley

1tbs chopped fresh mint

1tbs olive oil

½ tbs cider vinegar

Freshly ground black pepper

 

Method

 

  1. Put quinoa in a saucepan of 300ml boiling water  or stock,  bring back to boil and simmer for about 20 until most of the liquid is absorbed. Remove from heat and drain off excess liquid. Toss with fork. Cool.

  2. Toss in the mango, red onion, lime/lemon,  coconut and butterbeans into the cold quinoa

  3. In a separate small bowl or cup, mix the oil and vinegar and pour over the quinoa salad and toss well

  4. Stir in the chopped herb
