Quick Egg and Rice Supper





Ingredients for 2


1 savoury white sauce recipe (see below)

4 boiled eggs - shelled and sliced

Cooked boiled rice for 2

2 large tomatoes

50g grated cheese

Freshly ground pepper (optional)


Quick Savoury White Sauce Recipe


Ingredients


150ml milk of your choice

150ml chicken or vegetable stock2tbs sauce flour - Carrs make one as do most supermarkets

Freshly ground pepper


Method

Place the milk, stock and the sauce flour into a pan over a medium heat 

Bring everything to the boil. stirring continuously

Season to taste with pepper

Simmer for a further 3 minutes



Then

  1. Place the cooked rice in the bottom of an oven proof dish

  2. Distribute the sliced boiled eggs over the top of the rice

  3. Pour the savoury white sauce over the eggs and rice.

  4. Sprinkle with grated cheese

  5. Place sliced tomatoes over the top

  6. Sprinkle with ground pepper (optional)

  7. Grill until golden brown
