Pork Meat Balls in Mediterranean Tomato Sauce

Pork Meat Balls


Ingredients


500g Pork mince

1 or 2 tbs flour


Method


  1. Divide the pork mince into 12 even sized balls

  2. Roll each ball in flour to coat

  3. Leave to one side on a plate while you make the sauce


Mediterranean Tomato Sauce


Ingredients


2 large tomatoes - sliced

1 tin chopped tomatoes

1 onion - diced

1 bell pepper - chopped

2 sticks of celery – chopped

2 medium carrots sliced

100g button mushrooms - sliced

1 tsp oregano

1tbs tomato puree

1 garlic clove (crushed) or equivalent garlic puree

½ pint chicken stock

1tbs olive oil


Method

  1. Heat the olive oil, add the onion, fry until translucent then add the chopped pepper, sliced tomatoes, celery and carrots. When they are soft add the garlic and and tomato puree - cook for a further 30 secs. Pour in the tin of chopped tomatoes, stir in and heat for a few seconds

  2. Pour in the chicken stock stir and bring to the boil

  3. Stir in the oregano

  4. Mix in the sliced mushrooms and bring back to simmering point

  5. Place the pork balls evenly into the sauce, spoon some sauce over each one.

  6. Place in the oven 160 degrees fan oven Gas 4 for about 30 – 40 minutes or until the meat balls are cooked through.





Serve with pasta or rice and a side salad.
