Sometimes it's fun to put a few things together and see what turns up! I fancied something fresh and healthy for lunch and came up with Orange and cashew nut salad.
It has a mild flavour that builds in your mouth, becoming more and more 'moreish' with each forkful!
I can guarantee it would be a hit at any BBQ.

Ingredients
75g pasta per person
100g cashew nuts
Zest of one orange
Juice of half an orange
1 orange peeled and chopped
1 1/2 tbs mayonnaise of choice I use Helman's real mayonnaise as it is free from cow dairy
Tbs chopped fresh herbs mixed together - chives, thyme, parsley, mint - or what you fancy!
Small pinch sea salt
Freshly ground black pepper
Ready prepared quinoa and/or mixed rice salad mix or pine nuts/seeds of choice
Method
Cook the pasta drain and cool
Peel and chop orange
Get zest from another orange
Juice half of that orange
Chop up the herbs
Put mayonnaise into a small bowl and mix in the orange zest, orange juice, herbs, salt and pepper
Mix the cooked pasta, orange pieces and cashews together
Fold in the mayonnaise mix
Sprinkle with seed mix of your choice
