For 2 adults and two children
Ingredients:
Three large potatoes boiled and sliced
1 pint white sauce (same as in Omega Rich Fish Pie) but use a chicken stock cube
1 orange sweet pepper
1 red sweet pepper
1 green sweet pepper
2 large tomatoes
1 yellow sweet pepper
Two large courgettes
1 medium sized aubergine
1 red onion
I ball mozzarella cheese
1or 2 oz cheddar cheese
Dried oregano - about 1/2 tsp
2 sprigs fresh rosemary (optional)
2 sprigs fresh thyme (optional)
Method:
Prepare all veg as shown in photo
Heat one tbs olive oil in a large baking pan
Saute onion until soft
Add rest of veg and heat through for 2 - 3 minutes adding a tiny amount of extra oil if needed. Mix them all together.
Sprinkle over with dried oregano
Break up the mozzarella and arrange over the veg
Place the rosemary and thyme on the mixture
Cover with foil and place in oven at 180 degrees fan oven or Gas mark 6
Bake for an hour - check after 45 mins - the veg should be tender but not too soft.
If necessary return to oven without the foil until veg as you would like (don't let it get too dry)
Put the cooked veg into an oven proof dish
Arrange sliced potatoes over the top
Pour white sauce over the potatoes and veg mix
Sprinkle over grated cheddar cheese
Place under a hot grill until browned.
