Lemon Curd in minutes, low fat, low sugar

This lemon curd is so very delicious your family will devour it within days!
You'll wish the recipe made more than one jar!
You'll need a large microwave bowl, 1lb jam jar and about 20 mins!
50g butter or margarine (dairy free if you prefer)
You could try coconut oil, (I haven't yet!)
60g caster sugar
2 lemons - rind and juice
2 eggs beaten and then put through a sieve
Cut the marg into small pieces in the large bowl
Melt on high in the microwave for about a minute
Stir in the remaining ingredients and cook on high for 2 1/2 - 3 1/2 mins
Stir 2 or three times until sugar dissolves
Continue to cook on high for 2-3mins, stirring every30 secs or so until the mixture thickens.
Leave to cool.
Pour into a clean pot and keep in the fridge
