This is a recipe from Ella Woodward's book Deliciously Ella.
It really was delicious with a wonderful depth of flavour. In one meal we had our five a day:
Per serving we got:
1 enormous courgette
Juice of one lime + pulp
1/4 cup brazil nuts
Fresh mint leaves - about three each
6 chestnut mushrooms
Cooked with olive oil, freshly ground pepper and a tiny pinch of sea salt
For dessert we had fresh fruit - satsumas and apples.
