Fatless Chocolate and Strawberry Sponge (low sugar)
Recipe for fatless Chocolate and Strawberry Sponge
Fat free chocolate sponge with goat's cream and strawberries
50g caster sugar
60g plain flour
10g cocoa powder
1 tsp baking powder
Approx 4 tbs reduced sugar strawberry or apricot jam
1/4 pt double goats cream - whipped or coconut yoghurt
Beat eggs and sugar with electric whisk until twice their volume
Sift and fold in the flour, cocoa powder and baking powder gently so you don't lose too much air from the mix.
Divide evenly between two 7" sponge tins (greased and lined with greaseproof paper)(I used grease proof paper inserts but you can grease the tins and line with grease proof paper cut to shape)
Bake in 170 degree fan oven Gas 5 for approx 10mins until risen and firm to touch
Leave to cool.
Spread jam on the bottom of both sponges.
Sandwich them together with whipped cream and strawberries
Spread more jam on the top of the cake and decorate with more strawberries.
Place in a covered container and leave in the fridge for a few hours or overnight if possible.
