Courgette and Pine Nut Rice with courgette flowers

Serves 4



Rice for four cooked as per instructions on the packet

5 courgettes, sliced

12 courgette flowers cleaned and roughly torn up

1 tbs olive oil

2oz /150g pine nuts

¼ tsp celery salt

1 tbs chopped fresh parsley

1 tsp chopped garlic chives and/or onion chives

Black pepper to taste


You can use a small onion chopped and fried until soft and see through, but I haven’t here




  1. Cook the rice

  2. While it is cooking put the courgette slices into a microwave dish with about a tbs water. Cook on high for approx 2 mins  - they should be ‘al dente’, strain off excess fluid, or par boil for a minute or two – they mustn’t go soft.

  3. Heat the olive oil in a small frying pan, add the courgettes and saute until lightly brown

  4. Place the cooked rice into a serving dish and add the pine nuts, celery salt, parsley, chives and courgette flowers.

  5. Season to taste with black pepper
