Roasted New Potatoes with Garlic and Rosemary

Serves 4




1lb/500g new potatoes

3 or four garlic cloves in their skins

1x5” sprig rosemary

4 tbs olive oil




  1. Place clean new potatoes in a roasting tin

  2. Pour over the olive oil and coat the potatoes – add a little more if necessary

  3. Crush the garlic cloves and mix them into the potatoes

  4. Place the rosemary sprig on the top of the potatoes.  The leaves will fall of during cooking and mix in with the potatoes

  5. Place into the oven Fan 140, gas 4 for half an hour or so.  Stir the potatoes around a couple of times during this time.

  6. Check if they are cooked after 20 mins by piercing one with a sharp knife. If the knife doesn’t slide in easily they are not cooked. Leave in the oven for a little longer until they are cooked through.

  7. Remove from the oven and place in a serving dish – cover and keep warm until needed – unless of course you are serving them cold!
