Serves 4
Ingredients
A couple of handfuls of rocket leaves
About ten chive leaves, chopped – I like to use onion and garlic chives
2 ripe avocados
1 lemon - halved - one half for lemon juice. The other half slice thinly and cut into quarters to garnish.
2 tbs lemon juice
A handful of rocket and viola flowers
For the dressing
6 tbs olive oil
2 tbs white wine vinegar
1tsp dry mustard
Freshly ground salt and pepper
Method
Make the dressing by mixing all the ingredients together with a fork in a small bowl. Leave to chill in the fridge
Halve, stone and peel the avocados, then slice thinly and toss in lemon juice
Cut the goat cheese into bite sized pieces
Place the rocket leaves and chopped chives in a salad bowl
Lay the avocado and goat cheese onto the top of the leaves
Scatter the viola and rocket flowers on the top
Spoon over the dressing.
Garnish round the edges with lemon quarter slices
Enjoy with beetroot and nasturtium salad plus rye bread
for a healthy,vibrant lunch
