Ingredients
1oz flour of your choice
1oz butter or Pure spread or coconut oil (the latter two are dairy free)
1/4 pint (150ml) milk (I use soya milk)
1/4 pint (150ml) chicken or vegetable stock)
Freshly ground pepper to your own taste
Method
Melt the butter or fat of your choice in a saucepan
Add flour and cook over a low heat stirring for two minutes
Very gradually blend in the milk and stock, stirring all the time - you can let go of the pan as you add the milk!
Cook over a medium heat, stirring continuously until the sauce thickens, boils and is smooth
Lower the heat and simmer gently for three minutes, stirring occasionally
